Bartolini spelt flour is made from Italian spelt, or farro, which is an ancient grain. The flour makes a dark, slightly dense dough with a slightly nutty flavour similar to barley.Â
Use the flour to make simple pasta dough, using just water to bring the flour together – shape the dough using a chitarra cutter to make ribbons of fettuccine, or make cavatelli dumplings by rolling small balls of dough against a gnocchi ridger.
Spelt flour also makes beautiful bread, with a dark colour, nutty flavour and firm texture.
The Bartolini family has been based in Umbria for six generations, and the company started as a small oil mill operated by animal power. Since those very early days, they have grown into a highly respected Umbrian brand supplying quality olive oil, grains and pasta.
