Belazu zhoug is an intensely herbal paste that adds fresh, spicy notes to grilled vegetables, chicken and lamb. Though originally from Yemen, zhoug is possibly the most popular spice blend in Israeli street food.
The main flavour in zhoug is coriander. The addition of warming spices like cloves, cardamom and cumin give the paste a curry-like character, while basil, parsley and jalapenos give a fresh lift and a slight kick. Enjoy the zhoug in a similar way to an Indian coriander & lime chutney – simply as a condiment with flatbreads and grilled meats. Stir zhoug through yoghurt to make a vibrant dip that’s brilliant for barbecues, or even shake it up with olive oil and a little white wine vinegar to make a punchy salad dressing.
