Belazu apricot harissa is a richly sweet and spiced paste with flavours of paprika, ginger, cinnamon and cloves. It is also made with rose petals, which gives it a subtle sweet depth. The sweetness of the apricots and raisins is balanced with tart acidity from balsamic vinegar and salty capers.Â
The Middle Eastern sauce is fantastic mixed with yoghurt and used to dress grilled lamb or steaks.Â
Try using this apricot harissa to coat tinned chickpeas before grilling for a crunchy, spiced snack, or spoon a little of the sauce into the roasting tray when you make gravy from a roasted chicken.
