Terre Exotique’s black sugar from Amami Oshima is a Japanese sugar made from sugar cane. The cane is washed and rinsed, then cold pressed to extract the juice. This juice is then slowly reduced over a wood fire for 5 days – with nothing else added – until it caramelises, then crystallizes into dark nuggets.

The hard sugar crystals have chocolate and liquorice flavours. Crush, then sprinkle over berries, French toast or crème brulées for a rich finish.

This 500g bag is ideal for professional kitchens – the black sugar comes in opaque packaging, protecting it from light and preserving the fresh flavour, while the flat base makes it easy to store.
