Mirin is a subtly sweet, tangy Japanese rice wine, and a key ingredient when making teriyaki and yakitori sauces, noodle broths and marinades.Â
Sake and mirin are both varieties of rice wine, however mirin has a higher sugar content and lower alcohol content.Â
To use mirin to make a yakitori sauce, follow the below recipe:
- In a small saucepan combine 120ml soy sauce, 120ml mirin, 60ml sake and 50g caster sugar.Â
- Bring to the boil and boil for 8-10 minutes. The sauce should be thick and syrupy.Â
- Set it aside to cool.
Yakitori sauce is wonderful paired with chicken, salmon and roasted vegetables.
