Mizkan sushi seasoning, also known as sushi vinegar, sushisu or sushi-su, is a ready-blended mix of rice vinegar, sugar, and salt used to turn normal short-grain Japanese rice into sushi rice.
Use a paddle to fold the seasoning into still-warm, cooked short-grain rice to make sushi rice. Sushi seasoning gives the rice a distinctive sweet-sour taste, and sticky texture – perfect for rolling in nori seaweed sheets to make maki rolls, or top with raw fish for nigiri sushi.
Directions for use: To make sushi rice, mix 5tbsp of sushi seasoning with 4 cups of hot cooked sushi rice (or 2 cups when uncooked). For the ‘perfect’ sushi rice, experts recommend mixing the rice with the sushi seasoning in a hangiri sushi barrel, which is wooden to absorb excess moisture.
